Ingredients

4 whole wheat mini pitas

1 cup shredded mozzarella cheese

1/2 cup roasted Hatch green chiles, chopped (fresh or canned)

1/2 cup marinara sauce

1/4 cup red onion, thinly sliced

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

Fresh cilantro or parsley, for garnish (optional)

Optional toppings: sliced olives, jalapeños, or a drizzle of sour cream

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Pitas: Place the whole wheat mini pitas on a large baking sheet lined with parchment paper for easy cleanup.

Sauce It Up: Using a spoon, spread about a tablespoon of marinara sauce on each pita, leaving a little border around the edges for the crust.

Add the Cheese: Sprinkle a generous quarter-cup of shredded mozzarella cheese over the marinara sauce on each pita.

Top with Hatch Chiles: Evenly distribute the chopped roasted Hatch green chiles across the cheese-covered pitas.

Add Onions and Seasoning: Top each pita with a few slices of red onion. Then, sprinkle garlic powder, smoked paprika, salt, and black pepper over the toppings for an extra layer of flavor.

Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly and the edges of the pitas are crisp and slightly golden.

Garnish: Once baked, remove from the oven and let cool for a minute. Garnish with fresh cilantro or parsley if desired, and add any optional toppings like olives or jalapeños.

Serve and Enjoy: Cut into halves or quarters for easy serving and dig in!
