Salmon Skewers with Mango Salsa

For the Salmon Skewers:

1 lb (450g) salmon fillet, skin removed

2 tbsp olive oil

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp dried oregano

Salt and pepper, to taste

Skewers (soaked in water for 30 minutes if wooden)

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Prepare the Marinade for Salmon: In a bowl, combine the olive oil, minced garlic, smoked paprika, dried oregano, salt, and pepper. Mix well.

    Cube the Salmon: Cut the salmon fillet into 1-inch cubes. Add the salmon to the marinade, tossing gently to coat. Let it marinate for at least 30 minutes to develop flavors.

      Make the Mango Salsa: In a separate bowl, mix the diced mango, chopped red onion, minced jalapeño, and chopped cilantro. Squeeze the lime juice over the mixture, add salt to taste, and toss gently. Set aside and allow the flavors to meld.

        Assemble the Skewers: Thread the marinated salmon cubes onto the soaked skewers. Leave a little space between each piece for even cooking.

          Preheat the Grill: Heat your grill (or grill pan) to medium-high heat. Lightly oil the grill grates to prevent sticking.

            Grill the Salmon Skewers: Place the skewers on the grill and cook for 2-3 minutes on each side or until the salmon is opaque and flakes easily with a fork. Be careful not to overcook.

              Serve: Remove the skewers from the grill and serve hot. Top with a generous spoonful of mango salsa for a refreshing twist.
