Slow Cooker Chickpea Stew

2 cups dried chickpeas (or 4 cans, rinsed and drained)

1 large onion, diced

3 cloves garlic, minced

2 medium carrots, chopped

2 stalks celery, chopped

1 bell pepper (any color), diced

1 can (14 oz) diced tomatoes (with juice)

4 cups vegetable broth

1 tablespoon tomato paste

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon ground coriander

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

2 cups fresh spinach (or kale)

2 tablespoons olive oil

Fresh cilantro or parsley for garnish (optional)

Lemon wedges for serving (optional)

Instructions
 

Prepare Chickpeas: If using dried chickpeas, soak them overnight in water. Drain and rinse before adding them to the slow cooker. If using canned, simply rinse and drain.

    Sauté Vegetables: In a skillet over medium heat, add olive oil. Once hot, add the diced onion, and sauté until translucent (about 5 minutes). Stir in garlic, carrots, celery, and bell pepper. Sauté for another 5 minutes until softened.

      Combine in Slow Cooker: In the slow cooker, combine the sautéed vegetable mixture with chickpeas, diced tomatoes, vegetable broth, tomato paste, cumin, smoked paprika, ground coriander, thyme, bay leaf, salt, and pepper.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chickpeas are tender and the stew is thickened. Stir occasionally if possible.

          Add Greens: About 30 minutes before serving, add the fresh spinach (or kale) to the stew and stir until wilted.

            Taste and Adjust: Before serving, taste the stew and adjust seasonings with additional salt, pepper, or spices according to your preference. Remove the bay leaf.

              Serve: Ladle the stew into bowls, garnish with chopped fresh cilantro or parsley, and serve with lemon wedges on the side for an extra burst of flavor.
