Air Fried Sweet Corn Fritters

1 cup fresh or frozen sweet corn kernels (thawed if frozen)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 cup grated Parmesan cheese (optional)

2 large eggs

1/4 cup milk (dairy or non-dairy)

2 tablespoons chopped fresh chives (or green onions)

1 teaspoon baking powder

1 teaspoon garlic powder

1/2 teaspoon paprika (smoked or sweet)

Salt and pepper to taste

Cooking spray or a small amount of olive oil for air frying

Prepare the Mixture: In a large mixing bowl, combine the sweet corn kernels, flour, cornmeal, and Parmesan cheese (if using). Mix well to combine.

    Add Wet Ingredients: In a separate bowl, whisk together the eggs and milk until well combined. Pour this mixture into the dry ingredients.

      Season the Fritter Mix: Add the chopped chives, baking powder, garlic powder, paprika, salt, and pepper to the bowl. Stir everything together until just combined. The batter will be slightly thick but should hold together.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Form the Fritters: Using a tablespoon or small ice cream scoop, portion out the mixture and gently flatten them into fritter shapes. You should get about 10-12 fritters, depending on the size.

            Prepare for Air Frying: Lightly spray the air fryer basket with cooking spray or brush a little olive oil on it to prevent sticking. Place the fritters in a single layer in the basket, ensuring they do not touch for even cooking (work in batches if necessary).

              Air Fry the Fritters: Air fry the fritters at 375°F (190°C) for about 10-12 minutes, flipping halfway through, or until they are golden brown and crispy.
