Ingredients

4 boneless, skinless chicken breasts

2 large onions, thinly sliced

4 tablespoons unsalted butter

1 teaspoon olive oil

1 tablespoon brown sugar

2 cups beef broth

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon garlic powder

Salt and pepper to taste

1 cup Swiss cheese, shredded

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Caramelize the Onions: In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and brown sugar. Cook, stirring frequently, for about 20-25 minutes, or until the onions are caramelized and golden brown.

Add Flavors: Pour in the beef broth, Worcestershire sauce, thyme, and garlic powder. Continue to simmer until the mixture thickens slightly, about 5-7 minutes. Season with salt and pepper to taste.

Prepare the Chicken: While the onions are caramelizing, season the chicken breasts with salt, pepper, and a sprinkle of garlic powder. Heat a bit of oil in a separate skillet over medium-high heat and sear the chicken for 2-3 minutes on each side until golden brown. Do not cook through.

Assemble the Dish: In a baking dish, arrange the seared chicken breasts. Spoon the caramelized onion mixture over each piece of chicken, ensuring they are well-covered.

Add Cheese: Top each chicken breast with a generous amount of shredded Swiss cheese.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and lightly golden.

Serve: Remove from the oven and let the chicken rest for a few minutes. Garnish with freshly chopped parsley before serving. Enjoy your deliciously savory dish!
