2 cups fresh or frozen sweet corn kernels

1 cup all-purpose flour

1/2 cup cornmeal

1/4 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp smoked paprika

1/2 tsp garlic powder

1/4 tsp black pepper

3/4 cup buttermilk (or regular milk with a splash of vinegar)

1 large egg

1/4 cup green onions, finely chopped

1/2 cup sharp cheddar cheese, shredded

1 tbsp olive oil

Fresh cilantro or parsley for garnish

Sour cream or Greek yogurt for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Batter: In a large mixing bowl, combine the flour, cornmeal, baking powder, baking soda, salt, smoked paprika, garlic powder, and black pepper. Whisk well to combine.

      Add Wet Ingredients: In another bowl, whisk together the buttermilk and egg until smooth. Gradually pour the wet mixture into the dry ingredients, stirring until just combined.

        Incorporate Corn and Flavorings: Gently fold in the sweet corn kernels, green onions, and shredded cheddar cheese into the batter until evenly distributed.

          Form the Fritters: Using a 1/4 cup measure, scoop the fritter batter onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each mound to form a patty shape. Drizzle or brush the tops lightly with olive oil for crispiness.

            Bake the Fritters: Bake in the preheated oven for 20-25 minutes or until the fritters are golden brown on the bottom. Carefully flip the fritters halfway through for even baking.
