2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon sea salt

¼ teaspoon black pepper

½ cup mayonnaise

1 tablespoon lemon juice

1 garlic clove, minced

1 teaspoon Dijon mustard

¼ teaspoon sea salt

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into wedges, about 1/2 inch thick for even roasting.
