For the BBQ Cauliflower:

1 medium head of cauliflower, cut into florets

1 cup barbecue sauce (your favorite brand or homemade)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

For the Ranch Slaw:

2 cups green cabbage, thinly sliced

1 cup purple cabbage, thinly sliced

1 large carrot, shredded

1/2 cup ranch dressing (store-bought or homemade)

1 tablespoon apple cider vinegar

1/4 teaspoon black pepper

1/4 teaspoon celery seed (optional)

For Serving:

8 small corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Cauliflower:

    - Preheat your oven to 425°F (220°C).

      - In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, garlic powder, and a generous pinch of salt and pepper until evenly coated.

        - Spread the cauliflower in a single layer on a baking sheet lined with parchment paper. Roast in the oven for 25-30 minutes, or until golden brown and tender, tossing halfway through the cooking time.

          Add BBQ Sauce:

            - Once roasted, remove the cauliflower from the oven and transfer it back to the bowl. Pour in the barbecue sauce and toss until the florets are well coated. Return to the baking sheet and bake for an additional 5-10 minutes for the sauce to caramelize.
