Ingredients

2 cups cooked chicken, shredded (you can use rotisserie chicken for convenience)

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1 can (4 oz) diced green chiles, drained

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/4 teaspoon salt (to taste)

1/4 teaspoon black pepper (to taste)

6 large flour tortillas

2 tablespoons olive oil or butter (for cooking)

Optional toppings: chopped cilantro, salsa, guacamole, or more sour cream

Instructions

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, Monterey Jack cheese, cheddar cheese, diced green chiles, sour cream, garlic powder, cumin, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly combined.

Assemble the Quesadillas: Lay out one tortilla on a clean surface. Spoon about 1/3 to 1/2 cup of the chicken and cheese filling onto one half of the tortilla. Fold the tortilla in half over the filling, creating a half-moon shape. Repeat this step with the remaining tortillas and filling.

Cook the Quesadillas: Heat a large skillet over medium heat and add 1 tablespoon of olive oil or butter. Once hot, carefully place one quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Repeat with the remaining quesadillas, adding more oil or butter as needed.

Serve: Once cooked, remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges. Serve warm with optional toppings such as chopped cilantro, salsa, guacamole, or extra sour cream.

Enjoy: Dive into your cheesy green chile chicken quesadillas, savoring the gooey cheese and zesty flavors!
