1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 (15 oz) can diced tomatoes, drained

1 (15 oz) can tomato sauce

1 packet taco seasoning (about 1 oz)

8 oz elbow macaroni or rotini pasta

1 ½ cups beef broth

1 cup sharp cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1 cup frozen corn (optional)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the macaroni according to the package instructions until al dente. Drain and set aside.

    Brown the Ground Beef: In a large skillet over medium heat, add the ground beef. Cook, stirring frequently, until it's browned and cooked through. Drain excess fat if needed.

      Sauté the Vegetables: Add the diced onion, bell pepper, and minced garlic to the skillet with the ground beef. Cook for about 5 minutes, until the vegetables are softened.

        Combine Ingredients: Stir in the drained diced tomatoes, tomato sauce, taco seasoning, and beef broth. Bring the mixture to a simmer.

          Mix in the Pasta: Once the mixture is simmering, gently fold in the cooked pasta and corn (if using). Stir until everything is well combined.
