Chilled Greek Pasta

Ingredients
  

8 oz (225 g) pasta (fusilli or penne work well)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

1/2 tsp garlic powder

Salt and pepper to taste

Optional: 1/4 cup roasted red peppers, chopped

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Drain well and set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper until well combined.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and optional roasted red peppers.

        Dress the Pasta: Pour the dressing over the pasta salad and gently toss until all ingredients are well coated.

          Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill.

            Garnish and Serve: Before serving, give the salad a light toss and garnish with fresh parsley. Taste and adjust seasoning if necessary.
