1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon cinnamon (plus extra for sprinkle)

1/2 teaspoon salt

2 tablespoons granulated sugar

1 cup milk

1 large egg

2 tablespoons melted butter (plus more for greasing)

1 medium apple, peeled and diced (preferably Granny Smith)

1/4 cup maple syrup (for serving)

Powdered sugar (for dusting, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with melted butter.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, cinnamon, salt, and granulated sugar until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk the milk, egg, and melted butter together until mixed smoothly.

        Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients. Stir until just combined (a few lumps are perfectly fine).

          Add Apples: Gently fold in the diced apples, ensuring they're evenly distributed throughout the batter.

            Fill Muffin Tin: Using a small cookie scoop or spoon, fill each mini muffin cup about 3/4 full with batter. Sprinkle a pinch of cinnamon on top of each.

              Bake: Place the muffin tin in the preheated oven and bake for about 12-15 minutes, or until the pancake bites are golden and a toothpick inserted into the center comes out clean.

                Cool and Remove: Once baked, let the bites cool in the tin for 5 minutes before gently removing them and placing them on a wire rack.
