Among my favorite dishes to whip up during these colder months is the Hearty Shepherd's Pie with Sweet Potato Delight. This dish not only warms the body but also nourishes the soul, making it an ideal choice for family gatherings or intimate nights spent at home.

Classic Shepherd’s Pie with Sweet Potato Mash

Ingredients
  

For the Filling:

1 lb ground lamb (or beef)

1 medium onion, finely chopped

2 cloves garlic, minced

2 carrots, diced

1 cup frozen peas

1 tablespoon tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup beef broth

2 tablespoons olive oil

For the Sweet Potato Mash:

2 large sweet potatoes, peeled and cubed

3 tablespoons unsalted butter

1/4 cup heavy cream (or milk)

Salt and pepper to taste

A pinch of nutmeg (optional)

Instructions
 

Prepare the Sweet Potato Mash:

    - In a large pot, bring salted water to a boil. Add the cubed sweet potatoes and cook until they are tender (about 15-20 minutes).

      - Drain and return the sweet potatoes to the pot. Add butter, heavy cream, salt, pepper, and nutmeg (if using). Mash until smooth and creamy. Set aside.

        Make the Filling:

          - In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent (about 3-4 minutes).

            - Add the ground lamb (or beef) to the skillet. Cook until the meat is browned, breaking it up with a spatula (about 5-7 minutes).

              - Stir in the diced carrots, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for another 2-3 minutes.

                - Pour in the beef broth, bring to a simmer, and let it cook uncovered for 10-15 minutes, allowing the liquid to reduce slightly.

                  - Stir in the frozen peas and remove from heat.

                    Assemble the Shepherd's Pie:

                      - Preheat the oven to 400°F (200°C).

                        - In a greased baking dish (about 9x13 inches), layer the meat filling at the bottom.

                          - Spread the sweet potato mash evenly over the meat filling, smoothing it out with a spatula.

                            - Use a fork to create texture on the surface of the mash (this helps it crisp up in the oven).

                              Bake:

                                - Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the mash starts to golden and crisp on top.

                                  - If desired, broil for an additional 2-3 minutes to achieve extra color on the mash.

                                    Serve:

                                      - Remove from the oven and let it cool for a few minutes. Serve warm and savor the hearty flavors!
