Cold Lentil Pasta with Spinach

8 oz lentil pasta (green or red)

2 cups fresh spinach, chopped

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely diced

1/4 cup feta cheese, crumbled (optional)

1/4 cup Kalamata olives, pitted and sliced

3 tbsp extra virgin olive oil

2 tbsp red wine vinegar

1 tbsp lemon juice

1 tsp garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the lentil pasta and cook according to package instructions until al dente. Drain the pasta and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, garlic powder, salt, and pepper until well combined. Set aside.

      Combine Salad Ingredients: In a large mixing bowl, combine the cooked lentil pasta, chopped spinach, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives. Toss gently to mix all the ingredients evenly.

        Dress the Salad: Drizzle the dressing over the pasta and vegetable mixture. Toss gently until everything is coated in the dressing. Adjust seasoning with additional salt and pepper, if needed.

          Chill the Salad: Cover the bowl with plastic wrap or a lid, and place it in the refrigerator for at least 30 minutes to allow the flavors to meld together.
