Creamy Avocado Pesto Pasta

12 oz of pasta (spaghetti, fettuccine, or your choice)

2 ripe avocados, pitted and peeled

1 cup fresh basil leaves

2 cloves garlic, minced

1/4 cup pine nuts (or walnuts, for a budget-friendly option)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan version)

2 tablespoons lemon juice (freshly squeezed)

1/4 cup extra-virgin olive oil

Salt and pepper, to taste

Cherry tomatoes, halved (for garnish)

Optional: Red pepper flakes (for added heat)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining. Set the pasta aside.

    Prepare the Avocado Pesto: In a food processor, combine the ripe avocados, fresh basil leaves, minced garlic, pine nuts, Parmesan cheese, lemon juice, salt, and pepper. Blend until smooth.

      Add Olive Oil: While the food processor is running, slowly stream in the extra-virgin olive oil until emulsified and creamy. If the pesto is too thick, gradually add a few tablespoons of the reserved pasta water until you reach your desired consistency.

        Combine Pasta and Pesto: In a large mixing bowl, toss the drained pasta with the creamy avocado pesto. If needed, add more reserved pasta water to help coat the pasta evenly.

          Serve: Plate the pasta and garnish with halved cherry tomatoes, a sprinkle of extra Parmesan cheese, and red pepper flakes if desired. Drizzle with a bit more olive oil for added flavor and richness.
