Ingredients

1 cup orzo pasta

2 cups broccoli florets (fresh or frozen)

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

4 cups vegetable broth (or chicken broth)

1 cup whole milk (or your choice of milk)

1 ½ cups sharp cheddar cheese, shredded

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon onion powder

1 tablespoon Dijon mustard (optional, for extra flavor)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Orzo: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the orzo pasta and toast it for about 2 minutes, stirring constantly, until it becomes slightly golden.

Sauté the Vegetables: Add the remaining tablespoon of olive oil, diced onion, and minced garlic to the skillet. Sauté until the onion becomes translucent, about 3-4 minutes. If you are using fresh broccoli, add it now and sauté for another 2-3 minutes until slightly tender.

Add Broth and Seasonings: Pour in the vegetable broth, salt, black pepper, garlic powder, onion powder, and Dijon mustard. Stir to combine and bring the mixture to a boil.

Cook the Orzo and Broccoli: Once boiling, reduce the heat to medium-low, cover, and let it simmer for about 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed. If using frozen broccoli, add it about halfway through this cooking time.

Make it Creamy: Stir in the whole milk and shredded cheddar cheese until the cheese is completely melted and the mixture is creamy. Adjust the seasoning if needed.

Final Touches: Remove from heat. Garnish with chopped fresh parsley before serving.

Serve & Enjoy: Serve warm as a comforting side dish or a satisfying main course. Enjoy your creamy, cheesy goodness!
