1 large head of cauliflower, chopped into florets

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup sharp cheddar cheese, grated (plus extra for garnish)

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon nutmeg

Fresh chives or parsley, finely chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and continue cooking for an additional minute, until fragrant.

    Cook the Cauliflower: Add the cauliflower florets to the pot and stir to combine. Cook for 5–7 minutes, allowing the cauliflower to soften slightly.

      Add the Broth: Pour in the vegetable broth, bringing the mixture to a boil. Reduce heat to a simmer and cook for about 15–20 minutes, or until the cauliflower is tender.

        Blend the Soup: Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the mixture in batches to a traditional blender—just ensure it cools slightly before blending to avoid splatter.

          Add Cream and Cheese: Return the soup to the pot (if using a traditional blender) and stir in the heavy cream. Gradually add the sharp cheddar and Parmesan cheeses, mixing until melted and creamy. Season with salt, pepper, and nutmeg—taste and adjust seasoning if necessary.
