Creamy Garlic Broccoli Rice Casserole

2 cups of cooked rice (white or brown)

2 cups of fresh broccoli florets

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a kick)

1/4 cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onions and sauté for about 5 minutes until they become translucent. Add the minced garlic and cook for an additional 2 minutes, stirring frequently to prevent burning.

      Blanche the Broccoli: While the onions and garlic are cooking, bring a small pot of salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes until they turn bright green. Immediately transfer to an ice bath to stop the cooking process, then drain and set aside.

        Make the Creamy Sauce: In the same skillet with the onion and garlic, add the heavy cream, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Stir well and bring to a simmer. Once simmering, add the sharp cheddar cheese and Parmesan cheese, stirring until everything is melted and the sauce is creamy.

          Combine Everything: In a large mixing bowl, combine the cooked rice, sautéed broccoli, and creamy garlic sauce. Mix well until all ingredients are evenly coated.

            Prepare for Baking: Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly. Sprinkle the breadcrumbs over the top for a crunchy texture.
