Creamy Garlic Chicken and Pea Risotto

1 lb (450g) boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

2 tablespoons unsalted butter

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup Arborio rice

4 cups chicken broth, warmed

1/2 cup dry white wine (optional)

1 cup fresh or frozen peas

1/2 cup grated Parmesan cheese

1/4 cup heavy cream

Fresh parsley, chopped, for garnish

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. In a large skillet over medium heat, add the olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet, cover with foil, and let rest.

    Cook the Aromatics: In the same skillet, reduce the heat to medium-low. Add the butter and let it melt. Then add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent and the garlic is fragrant.

      Add the Rice: Stir in the Arborio rice and toast it in the butter for about 2 minutes, stirring constantly until the grains are slightly translucent around the edges.

        Deglaze: If using wine, pour it in and stir until it's mostly absorbed by the rice. This adds flavor and depth to your risotto.

          Cook the Risotto: Begin adding the warmed chicken broth one ladleful at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladleful. Continue this process for about 18-20 minutes or until the rice is creamy and al dente.

            Incorporate Peas and Cream: In the last 5 minutes of cooking, stir in the peas and heavy cream. This will add richness to the dish.

              Finish the Risotto: Once the rice has reached the desired consistency, remove the skillet from the heat. Stir in the grated Parmesan cheese until melted and creamy. Adjust the seasoning with salt and pepper if needed.
