12 ounces pasta of your choice (fettuccine or penne recommended)

2 tablespoons olive oil

3 cloves garlic, minced

5 ounces fresh spinach (about 8 cups)

8 ounces goat cheese, softened

1 cup heavy cream

½ cup grated Parmesan cheese

¼ teaspoon red pepper flakes (optional, for a kick)

Salt and pepper to taste

Fresh basil leaves, for garnish

Zest of 1 lemon (optional, for brightness)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté Garlic and Spinach: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes.
