Creamy Mushroom and Brie Pasta Bake

300g (10.5 oz) pasta (penne or rigatoni works best)

200g (7 oz) Brie cheese, rind removed and cut into small pieces

250g (8.8 oz) button or cremini mushrooms, sliced

1 medium onion, finely chopped

3 cloves garlic, minced

350ml (1.5 cups) heavy cream

250ml (1 cup) chicken or vegetable broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

1 cup breadcrumbs (optional, for a crunchy topping)

Instructions
 

Preheat the oven: Preheat your oven to 180°C (350°F).

    Cook the pasta: In a large pot of boiling salted water, cook the pasta until al dente, about 2 minutes less than package instructions. Drain and set aside.

      Sauté the vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

        Add mushrooms: Add the sliced mushrooms to the skillet. Sauté until they are golden brown and have released their moisture, around 5-7 minutes. Season with salt, pepper, thyme, and oregano.

          Make the sauce: Reduce the heat to low and add the heavy cream and broth to the skillet with the mushrooms. Stir in the grated Parmesan cheese until melted and smooth. Taste and adjust seasoning if necessary.

            Combine pasta and sauce: In a large mixing bowl, combine the cooked pasta with the creamy mushroom sauce. Fold in the Brie cheese pieces, allowing them to slightly melt into the mixture.

              Transfer to baking dish: Transfer the pasta mixture to a greased 9x13 inch (or similar size) baking dish. If you'd like a crunchy topping, sprinkle breadcrumbs evenly over the top.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbling.

                  Garnish and serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley before serving.
