Ingredients

2 medium zucchinis, spiralized into noodles (zoodles)

1 lb boneless, skinless chicken breasts, diced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried dill

1 teaspoon dried parsley

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

1 cup heavy cream or coconut cream for a dairy-free option

1 packet (1 oz) ranch seasoning mix

½ cup cherry tomatoes, halved

¼ cup grated Parmesan cheese (optional)

Fresh parsley, for garnish

Instructions

Prepare the Zoodles: Using a spiralizer, create zoodles from the zucchinis. Place them in a colander, sprinkle with a little salt, and let them stand for about 10 minutes to drain excess moisture.

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, garlic powder, onion powder, dill, parsley, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

Make the Creamy Ranch Sauce: In the same skillet, lower the heat to medium-low. Pour in the heavy cream (or coconut cream), then add the ranch seasoning mix. Stir well and let the mixture simmer for about 3-5 minutes, allowing it to thicken slightly.

Combine Ingredients: Return the cooked chicken to the skillet, along with halved cherry tomatoes and zoodles. Gently toss everything together to ensure the zoodles are coated with the ranch sauce. Cook for an additional 2-3 minutes until the zoodles are warmed through.

Serve: If using, sprinkle grated Parmesan cheese on top before serving. Garnish with fresh parsley for a pop of color.

Enjoy: Serve warm on your favorite plates or bowls, and savor the creamy goodness of this delicious dish!
