1 lb potato gnocchi

2 large red bell peppers, roasted and peeled

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon crushed red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves, for garnish

Roast the Peppers: Preheat your oven to 450°F (230°C). Place the red bell peppers on a baking sheet and roast for about 25-30 minutes, turning occasionally, until the skins are charred and blistered. Remove from the oven, cover with foil, and let them steam for 10 minutes. Once cooled, peel the skins off, remove the seeds, and chop the peppers into chunks.

    Prepare the Sauce: In a blender or food processor, add the roasted red peppers, heavy cream, and Parmesan cheese. Blend until you have a smooth sauce. Set aside.

      Cook the Gnocchi: In a large pot of salted boiling water, add the gnocchi. Cook according to package instructions until they float to the top, which usually takes about 2-3 minutes. Drain and set aside.
