Creamy Sausage Potato Casserole

1 lb (450g) mild or spicy Italian sausage, casings removed

4 large russet potatoes, thinly sliced

1 medium onion, chopped

2 cloves garlic, minced

1 cup (240ml) heavy cream

1 cup (240ml) chicken broth

1 cup (100g) shredded cheddar cheese

1 cup (100g) shredded mozzarella cheese

1 tsp dried thyme

1 tsp smoked paprika

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the sausage: In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it up into small pieces with a spatula. Remove the sausage from the skillet and set aside.

      Sauté the vegetables: In the same skillet, add the chopped onion and cook until softened, about 4-5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

        Prepare the sauce: In a mixing bowl, combine the heavy cream, chicken broth, thyme, smoked paprika, salt, and pepper. Whisk until well combined.

          Layer the casserole: In a greased 9x13-inch baking dish, layer half of the sliced potatoes on the bottom. Add half of the cooked sausage and half of the sautéed onion and garlic mixture. Sprinkle with half of the cheddar and mozzarella cheese. Pour half of the creamy sauce over the top.

            Repeat the layers: In the same dish, repeat the layering process with the remaining potatoes, sausage, onion-garlic mixture, and cheeses. Pour the rest of the creamy sauce on top.

              Cover and bake: Cover the casserole dish tightly with aluminum foil and bake in the preheated oven for about 45 minutes.

                Uncover and brown: After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is bubbly and golden brown.

                  Garnish and serve: Once baked, let the casserole sit for 5-10 minutes before serving. Garnish with fresh parsley and enjoy!
