Crispy Baked Zucchini Coins

2 medium zucchinis, sliced into ¼-inch coins

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

1 teaspoon dried Italian herbs (oregano, thyme, or basil)

½ teaspoon salt

¼ teaspoon black pepper

2 large eggs

¼ cup all-purpose flour

Cooking spray or olive oil for drizzling

Preheat Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Zucchini: Rinse and dry the zucchinis. Slice them into ¼-inch thick rounds. Pat the slices dry with a paper towel to remove excess moisture, which helps them crisp up in the oven.

      Set Up Breading Stations: In one shallow dish, place the flour. In a second shallow dish, beat the two eggs. In a third shallow dish, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, dried herbs, salt, and black pepper.

        Bread the Zucchini Coins:

          - Dredge each zucchini slice in the flour, shaking off any excess.
