4 medium russet potatoes

1/4 cup olive oil

Zest of 1 lemon

Juice of 1 lemon

2 teaspoons dried dill

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon sea salt

1/2 teaspoon black pepper

Fresh dill sprigs for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Cut each potato into 8 wedges by slicing them lengthwise, starting from the end of the potato to the center, then rotating pieces to cut into wedges.

      Make the Coating: In a large bowl, combine olive oil, lemon zest, lemon juice, dried dill, garlic powder, paprika, sea salt, and black pepper. Mix well until all the ingredients form a consistent marinade.

        Marinate the Wedges: Add the potato wedges to the bowl and toss them in the lemon-dill marinade until they’re evenly coated. Allow them to marinate for about 10-15 minutes to absorb the flavors.

          Arrange on Baking Sheet: Spread the marinated potato wedges in a single layer on the prepared baking sheet. Make sure they’re not touching to ensure they get crispy.

            Bake to Perfection: Place the baking sheet in the preheated oven. Bake for 30-35 minutes, flipping the wedges halfway through to ensure they brown evenly. The wedges should be golden and crispy when done.

              Serve: Remove the wedges from the oven and let them cool for a couple of minutes. Garnish with fresh dill sprigs if desired, and serve hot with your favorite dipping sauce or enjoy them plain!
