4 cups mixed spring greens (arugula, spinach, baby kale)

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

1 avocado, diced

½ cup radishes, thinly sliced

¼ cup red onion, thinly sliced

½ cup crispy chickpeas (store-bought or homemade)

¼ cup crumbled feta cheese (optional)

1 lemon, zested and juiced

3 tablespoons extra virgin olive oil

1 tablespoon honey

Salt and pepper to taste

¼ teaspoon red pepper flakes (optional, for a kick)

Instructions
 

Prepare the Greens: Rinse the mixed spring greens under cold water and spin dry in a salad spinner. Place them in a large salad bowl.

    Chop and Slice: Add the halved cherry tomatoes, sliced cucumber, diced avocado, sliced radishes, and red onion to the bowl with the greens. Toss gently to combine.

      Make the Dressing: In a small bowl, whisk together the lemon juice, lemon zest, olive oil, honey, salt, and pepper until well emulsified. Adjust seasoning to taste and add red pepper flakes if desired.
