Crispy Roasted Cauliflower Fajita Wraps

1 medium head of cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon chili powder

Salt and pepper, to taste

1 small red bell pepper, sliced

1 small yellow bell pepper, sliced

1 small red onion, thinly sliced

4 large whole grain tortillas or wraps

1 avocado, sliced

1/2 cup fresh cilantro, chopped

Lime wedges, for serving

Optional: sour cream or Greek yogurt for topping

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, onion powder, chili powder, salt, and pepper. Toss well to ensure the cauliflower is evenly coated.

      Roast the Cauliflower: Spread the cauliflower evenly on a lined baking sheet and roast in the preheated oven for about 20-25 minutes, or until crispy and golden brown, tossing halfway through for even cooking.

        Sauté the Peppers and Onions: While the cauliflower is roasting, heat a non-stick skillet over medium heat. Add a splash of olive oil, then toss in the sliced bell peppers and red onion. Sauté for about 5-7 minutes, until they are tender and slightly charred. Season with a pinch of salt and pepper.

          Warm the Tortillas: While your veggies are cooking, wrap the tortillas in aluminum foil and warm them in the oven for the last 5-10 minutes of the cauliflower roasting time, or you can warm them on the skillet for a few seconds on each side.

            Assemble the Wraps: Once the cauliflower is roasted and the veggies are sautéed, it's time to assemble your wraps. Place a generous amount of crispy roasted cauliflower on a tortilla, add sausage of the sautéed peppers and onions, a few slices of avocado, and sprinkle with fresh cilantro.

              Serve: Squeeze fresh lime juice over the top and add a dollop of sour cream or Greek yogurt, if desired. Roll the tortilla tightly to enclose the filling and repeat with the remaining tortillas.
