Crunchy Peanut Butter Granola

Ingredients
  

2 cups rolled oats

1 cup unsalted peanuts, roughly chopped

1/2 cup honey or maple syrup

1/2 cup creamy or chunky peanut butter

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon sea salt

1/2 cup additional mix-ins (such as dark chocolate chips, dried fruit, or seeds)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a medium bowl, combine honey (or maple syrup), peanut butter, melted coconut oil, vanilla extract, and cinnamon. Mix until well combined and smooth.

      Combine Dry Ingredients: In a large bowl, combine the rolled oats, chopped peanuts, and sea salt. Stir to combine.

        Combine Wet and Dry: Pour the wet mixture over the dry ingredients. Stir thoroughly until all the oats and peanuts are evenly coated.

          Spread on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet. Spread it out evenly, pressing it down lightly to help it clump together.

            Bake: Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure even cooking. Keep an eye on it to prevent burning; it should be golden brown and fragrant.

              Cool and Add Mix-Ins: Once baked, remove from the oven and let it cool completely on the baking sheet. As it cools, it will become crunchy. Once cooled, stir in your additional mix-ins.

                Store: Once completely cool, break the granola into clusters and store it in an airtight container at room temperature for up to two weeks.
