Crunchy Ranch Veggie Tacos

8 small corn tortillas

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 small red onion, finely chopped

1 medium avocado, diced

1 cup shredded lettuce

1 cup cherry tomatoes, halved

1 cup shredded cheese (Mexican blend or cheddar)

1/2 cup ranch dressing (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper, to taste

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Prepare the veggie filling: In a large mixing bowl, combine black beans, corn, diced red bell pepper, red onion, avocado, and cherry tomatoes. Drizzle with olive oil and add chili powder, cumin, salt, and pepper. Gently stir to combine, ensuring the avocado doesn't get too mushy.

    Warm the tortillas: In a dry skillet over medium heat, warm each tortilla for about 30 seconds on each side until they are pliable. Alternatively, you can wrap them in foil and heat them in a preheated oven at 350°F (175°C) for about 10 minutes.

      Assemble the tacos: Spread a generous tablespoon of ranch dressing on each tortilla. Spoon the veggie mixture onto the center, and top with a handful of shredded lettuce and a sprinkle of shredded cheese.

        Crisp it up (optional): If you prefer a crunchier taco, place assembled tacos in a preheated skillet and cook for 2-3 minutes on each side until the tortillas are crispy and the cheese is slightly melted.
