1 medium head of green cabbage (about 1 pound)

1 pound ground turkey (or beef)

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade equivalent)

1 cup canned black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 medium tomato, diced

1 cup shredded cheese (cheddar or Mexican blend)

1 avocado, diced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Salsa or hot sauce (optional)

Instructions
 

Prepare the Cabbage Cups: Carefully remove the outer leaves of the cabbage, keeping them intact. You will need about 12 leaves for the cups. Trim the thick stem at the base of each leaf to help them fold easily. Set aside.

    Cook the Ground Meat: In a large skillet, heat olive oil over medium-high heat. Add the diced onion and garlic, cooking until softened and fragrant, about 3–4 minutes. Then, add the ground turkey (or beef) and cook until browned and fully cooked through, about 6-8 minutes. Drain excess fat if necessary.

      Season the Meat: Stir in the taco seasoning, black beans, and corn. Mix well, letting everything cook together for another 5-7 minutes, until heated through and flavors are combined. Remove from heat and stir in the diced tomato.

        Assemble the Cups: Take a cabbage leaf and spoon a generous amount of the taco mixture into the center. Sprinkle shredded cheese on top and add diced avocado.
