Cucumber & Tuna Egg Wraps

1 large cucumber, sliced into thin sheets (using a vegetable peeler or mandoline)

1 can (5 oz) tuna in water, drained and flaked

2 large hard-boiled eggs, peeled and chopped

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper, to taste

1 tablespoon lemon juice

Optional: 1/4 cup of finely diced red onion or celery for extra crunch

Fresh arugula or spinach leaves for garnish

Instructions
 

Prepare the Tuna Mixture: In a medium bowl, combine the drained tuna, chopped hard-boiled eggs, mayonnaise, Dijon mustard, fresh dill, salt, pepper, and lemon juice. If using, add the diced red onion or celery. Mix well until everything is evenly combined.

    Slice the Cucumber: Using a vegetable peeler or mandoline, slice the cucumber into long, thin sheets. Aim for about 1/8 inch thick to make them pliable for wrapping.

      Assemble the Wraps: Take one cucumber sheet and place a small amount of the tuna and egg mixture at one end. Top with a few arugula or spinach leaves for added flavor and crunch.

        Wrap It Up: Carefully roll the cucumber sheet around the filling, starting from the edge with the tuna mixture. Secure it gently in place. Repeat this process for the remaining cucumber sheets and filling.

          Serve: Arrange the wraps on a platter and, if desired, drizzle with a little olive oil or an extra squeeze of lemon juice before serving. Enjoy immediately, or refrigerate for up to an hour before serving for a refreshing cold snack.
