4 large eggs

1/4 cup milk (or a dairy-free alternative)

Salt and pepper, to taste

1 tablespoon olive oil or butter

4 whole wheat tortillas (or your favorite wraps)

1 cup fresh spinach

1/2 bell pepper, diced (any color)

1/4 cup shredded cheese (cheddar, mozzarella, or your preference)

Optional add-ins: diced tomatoes, cooked bacon or sausage, avocado slices

Instructions
 

Whisk the Eggs: In a mixing bowl, combine the eggs, milk, salt, and pepper. Whisk vigorously until the mixture is well combined and frothy.

    Cook the Eggs: In a non-stick skillet, heat the olive oil or butter over medium heat. Pour in the egg mixture and allow it to cook without stirring for about 2–3 minutes, until the edges begin to set.

      Stir and Scramble: Gently stir the eggs with a spatula, pushing the cooked edges towards the center. Continue cooking and stirring until the eggs are softly scrambled and just cooked through, about 3–4 minutes more. Remove from heat.

        Prepare the Tortillas: Lay out the whole wheat tortillas on a clean surface. Evenly distribute the fresh spinach, diced bell pepper, and shredded cheese among the tortillas.

          Add the Eggs: Place a generous portion of the scrambled eggs on top of the veggies and cheese on each tortilla. If you're using any optional add-ins (like tomatoes or avocado), sprinkle them on top as well.

            Wrap it Up: Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top, securing all the filling inside. Repeat with all tortillas.
