Ingredients

1 French baguette, sliced into 1/2-inch pieces

2 tablespoons olive oil

2 ripe peaches, pitted and sliced thinly

6 ounces goat cheese, softened

2 tablespoons honey

1 tablespoon fresh lemon juice

1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme

Freshly cracked black pepper, to taste

Arugula or mixed greens, for garnish (optional)

Instructions

Prep the Baguette: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and brush each side lightly with olive oil.

Toast the Bread: Bake the slices in the preheated oven for about 5-7 minutes, or until they are golden brown and crisp. Remove from the oven and let cool slightly.

Prepare the Peach Mixture: In a mixing bowl, combine the sliced peaches, honey, lemon juice, thyme, and black pepper. Gently toss to coat, ensuring the peaches are well flavored.

Spread the Goat Cheese: Take each toasted baguette slice and generously spread softened goat cheese on top.

Top with Peaches: Spoon a few peach slices onto each goat cheese spread crostini, ensuring to get a good mix of juices.

Garnish and Serve: Optionally, you can top the crostini with a small handful of arugula or mixed greens for added freshness. Drizzle with a bit more honey if desired.
