4 large eggs

1 ripe avocado, halved and pitted

2 tablespoons Greek yogurt (or mayonnaise for a richer flavor)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 tablespoon fresh chives, chopped

1 tablespoon red onion, finely diced

Salt and pepper, to taste

1 head of butter lettuce or romaine, separated into leaves

Optional: Cherry tomatoes, halved, for garnish

Boil the Eggs: Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium heat, then cover and remove from heat. Let them sit for 10-12 minutes. Once done, cool the eggs under cold running water for a few minutes, then peel them and chop into small pieces.
