2 large ripe bananas, mashed

1 cup coconut milk (canned, full-fat for creaminess)

1/4 cup honey or maple syrup (adjust for sweetness)

1 tablespoon vanilla extract

1 teaspoon lemon juice (to prevent browning)

2 cups graham cracker crumbs

1/4 cup unsweetened shredded coconut (plus more for garnish)

1/4 cup unsalted butter, melted

1 teaspoon cinnamon

1/2 cup whipped cream (or coconut whipped cream for a vegan option)

1/4 cup chopped walnuts or pecans (optional for crunch)

Instructions
 

Prepare the crust: In a medium mixing bowl, combine the graham cracker crumbs, melted butter, shredded coconut, and cinnamon. Stir until the mixture resembles wet sand. Press the crust mixture into the bottom of an 8x8 inch baking dish evenly, and pack it tightly using the back of a measuring cup.

    Make the filling: In a large bowl, mix the mashed bananas, coconut milk, honey (or maple syrup), vanilla extract, and lemon juice until smooth. You can use an electric mixer or blend it for a couple of minutes to ensure a creamy consistency.

      Layer the filling: Pour the banana coconut mixture over the prepared crust, spreading it evenly with a spatula. Tap the dish gently on the counter to release any air bubbles.

        Add toppings (optional): If desired, sprinkle the chopped walnuts or pecans over the top for added texture and crunch.
