Frozen Banana Pops with Chocolate

3 ripe bananas

1 cup dark chocolate chips (or milk chocolate, if preferred)

1 tablespoon coconut oil (optional, for a smoother chocolate coating)

½ cup crushed nuts (almonds, walnuts, or peanuts)

½ cup shredded coconut (unsweetened or sweetened, your choice)

Popsicle sticks or wooden skewers

Instructions
 

Prep the Bananas: Peel the bananas and cut them in half. Insert a popsicle stick into the cut end of each banana half, making sure it goes in at least halfway for stability.

    Freeze the Bananas: Place the banana pops on a baking sheet lined with parchment paper. Make sure they are spaced apart and not touching each other. Freeze for at least 2 hours or until the bananas are solid.

      Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between until fully melted and smooth. Be careful not to overheat the chocolate.

        Coat the Banana Pops: Once the bananas are frozen, remove them from the freezer. Dip each banana pop into the melted chocolate, allowing any excess chocolate to drip off. You can use a spoon to help coat the bananas evenly.

          Add Toppings: Before the chocolate sets, roll or sprinkle the coated banana pops with the crushed nuts and/or shredded coconut to your liking.

            Final Freeze: Place the coated banana pops back onto the parchment-lined baking sheet and return them to the freezer for another 30 minutes to allow the chocolate to harden completely.
