Frozen Blueberry Crumble Yogurt Bites

Ingredients
  

2 cups plain Greek yogurt

1 cup fresh or frozen blueberries

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 cup granola (store-bought or homemade)

1/4 teaspoon cinnamon

A pinch of salt

Mini silicone muffin molds or an ice cube tray

Instructions
 

Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix well until fully incorporated and smooth.

    Add Blueberries: Gently fold in the blueberries into the yogurt mixture, being careful not to crush them too much. You want to keep some whole for texture.

      Prepare the Granola Crumble: In a separate bowl, mix the granola with cinnamon. This will give the crumble extra flavor and crunch.

        Fill the Molds: Spoon the yogurt and blueberry mixture into each compartment of the mini muffin molds or ice cube tray, filling them about 3/4 full.

          Add the Topping: Sprinkle about a teaspoon of the granola crumble on top of each yogurt bite, pressing down slightly to help them adhere.

            Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

              Unmold and Serve: Once frozen, carefully pop the yogurt bites out of the molds. If they’re sticking, you can run warm water over the outside of the mold to help release them.

                Enjoy: Serve immediately, or store in an airtight container in the freezer for up to a month. Perfect for a refreshing snack or dessert!
