1 cup coconut milk (canned for creaminess)

1/2 cup unsweetened almond milk

1 scoop vanilla protein powder (plant-based or whey)

1/4 cup almond butter

1/3 cup shredded unsweetened coconut

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

Pinch of sea salt

1/4 cup chopped almonds (for added crunch)

Pop molds or small paper cups

Instructions
 

Prepare Your Equipment: If using pop molds, ensure they are clean and ready. If using paper cups, gather popsicle sticks for later.

    Blend the Base: In a blender, combine the coconut milk, almond milk, protein powder, almond butter, shredded coconut, maple syrup, vanilla extract, and sea salt. Blend on high until smooth and well combined.

      Incorporate Nuts: Pour the mixture into a mixing bowl and fold in the chopped almonds, ensuring they are evenly distributed throughout the mixture.

        Fill the Molds: Carefully pour the blended mixture into the pop molds, leaving a small space at the top to allow for expansion during freezing. If using paper cups, fill them to the brim.

          Insert Sticks: If using pop molds, insert the sticks according to the manufacturer’s instructions. For paper cups, insert the sticks in the center of each cup.

            Freeze: Place the molds in the freezer for at least 4-6 hours, or until completely frozen.

              Unmold the Pops: Once frozen solid, remove the pops from the molds. If they are difficult to release, run warm water over the outside of the molds for a few seconds to loosen.
