Ingredients

2 cups mixed frozen berries (strawberries, blueberries, raspberries, blackberries)

1 cup pineapple chunks (fresh or canned)

1 medium banana, sliced

1 cup diced kiwi

1 cup coconut milk (or yogurt for a creamy texture)

2 tablespoons honey or maple syrup (adjust to taste)

1 tablespoon freshly squeezed lime juice

1/2 teaspoon vanilla extract

Mint leaves for garnish (optional)

Instructions

Prepare the Fruit: In a large mixing bowl, combine the mixed frozen berries, pineapple chunks, banana slices, and diced kiwi. Gently toss to mix the ingredients without mashing the fruit.

Make the Dressing: In a separate bowl, whisk together the coconut milk (or yogurt), honey or maple syrup, lime juice, and vanilla extract until smooth and well combined.

Combine: Drizzle the dressing over the fruit mixture and gently stir to coat all the fruit evenly.

Portion Out: Using a spoon, scoop the fruit salad into individual cups or small bowls. Leave a little space at the top for expansion as the fruit might continue to release some juices upon thawing.

Freeze: Cover each cup with plastic wrap or a lid and place them in the freezer for at least 2-3 hours, or until they are fully set.

Serving: To serve, remove the cups from the freezer and let sit at room temperature for about 5 minutes to slightly soften. Garnish with fresh mint leaves if desired and enjoy your chilled fruit cups!
