Ingredients

1 cup plain Greek yogurt

1/2 cup fresh raspberries (plus extra for garnish)

1/4 cup honey or maple syrup (adjust to taste)

2 tablespoons fresh lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

A pinch of salt

Silicone ice cube tray or mini muffin tin

Instructions

Prepare the Raspberries: In a small bowl, gently mash the fresh raspberries with a fork. You want to break them down slightly but still leave some small chunks for texture.

Mix the Yogurt Base: In a mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), fresh lemon juice, lemon zest, vanilla extract, and a pinch of salt. Stir until well combined and smooth.

Combine: Gently fold the mashed raspberries into the yogurt mixture, being careful not to completely break them apart to keep some of the raspberry pieces intact.

Fill the Molds: Using a spoon or a silicone spatula, fill your silicone ice cube tray or mini muffin tin with the yogurt-raspberry mixture. Press down slightly to remove air pockets.

Freeze: Once all molds are filled, place the tray in the freezer for at least 4 hours, or until the yogurt bombs are fully frozen.

Unmold the Bombs: After freezing, gently remove the yogurt bombs from the molds. If they are stuck, run the molds under warm water for a few seconds to loosen.

Serve and Enjoy: Place the frozen yogurt bombs on a plate. Optionally, garnish with a few fresh raspberries and a sprig of mint for extra flair. Enjoy your refreshing treat!
