Frozen Mixed Berry Cheesecake Cups

Ingredients
  

1 cup crushed graham crackers

4 tablespoons unsalted butter, melted

2 tablespoons sugar

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 cups frozen mixed berries (blueberries, raspberries, strawberries)

2 tablespoons honey or maple syrup (optional, for sweetness)

Fresh berries and mint leaves for garnish (optional)

Instructions
 

Prepare the Crust: In a medium mixing bowl, combine the crushed graham crackers, melted butter, and sugar. Mix until all the crumbs are well-coated with butter.

    Assemble the Base: Spoon a tablespoon of the graham cracker mixture into the bottom of each cup or dessert glass. Press down gently to form an even layer. Set aside.

      Make the Cheesecake Mixture: In a large mixing bowl, beat the softened cream cheese until creamy. Gradually add in the powdered sugar and vanilla extract, mixing until smooth and well incorporated.

        Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until completely blended. Take care not to deflate the whipped cream.

          Layer the Cheesecake: Spoon the cheesecake mixture evenly on top of the graham cracker crusts in each cup, filling them ¾ full.

            Add the Berries: In a small bowl, combine the frozen mixed berries and honey or maple syrup, if desired. Stir gently to coat the berries. Spoon the berry mixture on top of the cheesecake layer in each cup.

              Freeze: Place the cheesecake cups in the freezer for at least 4 hours or until firm.

                Serve: When ready to serve, remove from the freezer and let sit for about 10 minutes to soften slightly. Garnish with fresh berries and mint leaves, if desired.
