Ingredients

For the Cookies:

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 cup chopped pecans (optional)

1 cup dried peaches, chopped or diced

For the Ice Cream Filling:

2 cups peach ice cream (store-bought or homemade)

1/2 cup crushed graham crackers (optional, for extra texture)

Fresh peach slices (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing just until combined. Fold in the chopped pecans and dried peaches.

Form the Cookies: Use a cookie scoop or tablespoon to portion out dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with the palm of your hand.

Bake: Bake for 10-12 minutes, or until the edges are golden and the centers are set. Remove from the oven and let them cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Scoop the Ice Cream: While the cookies cool, take the peach ice cream out of the freezer to soften slightly (about 5-10 minutes).

Assemble the Sandwiches: Once the cookies are completely cooled, take one cookie, scoop about 2 tablespoons of peach ice cream on the flat side, and top with another cookie to create a sandwich. Press gently to secure the filling. Roll the edges of the ice cream filling in crushed graham crackers for added texture, if desired.

Freeze: Place the assembled cookie sandwiches on a parchment-lined baking sheet and freeze for at least 1-2 hours or until firm.

Serve: To serve, you can garnish with fresh peach slices on the side. Enjoy the refreshing sweetness of your peach ice cream cookie sandwiches!
