1 ½ cups rolled oats

½ cup all-purpose flour (or almond flour for a gluten-free option)

⅓ cup brown sugar

½ teaspoon cinnamon

¼ teaspoon salt

½ cup unsalted butter, melted (or coconut oil for a dairy-free version)

1 cup fresh or frozen peaches, diced (about 2 medium peaches)

1 cup fresh or frozen raspberries (may substitute with other berries)

2 tablespoons honey or agave syrup

1 tablespoon lemon juice

1 teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch (or similar) baking pan with parchment paper, allowing some overhang for easy removal later.

    Make the Crust: In a large mixing bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Mix well. Pour in the melted butter and stir until the mixture is evenly combined and crumbly.

      Assemble the Base: Press 2/3 of the oat mixture into the bottom of the prepared baking pan to create a firm base. Use a spatula or your fingers to pack it tightly.

        Prepare the Fruit Filling: In a medium bowl, combine the diced peaches, raspberries, honey (or agave), lemon juice, and vanilla extract. Gently mix until the fruits are coated.

          Layer the Fruit: Pour the fruit mixture over the crust in the baking pan, spreading it out evenly.

            Add the Topping: Crumble the remaining oat mixture evenly over the top of the fruit layer, making sure to cover it completely.

              Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the fruit is bubbly.

                Cool: Remove the pan from the oven and let it cool at room temperature for about 10-15 minutes. Then, transfer it to the refrigerator and allow it to chill for at least 2 hours before cutting into bars. For best results, chill overnight.

                  Slice and Serve: Once completely chilled, lift the bars out using the parchment overhang. Cut them into squares or rectangles, and enjoy straight from the fridge! These bars can be stored in an airtight container in the freezer for up to one month.
