2 cups fresh pineapple, diced

1 can (14 oz) coconut milk (full-fat for creaminess)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1/2 cup unsweetened shredded coconut

1 teaspoon vanilla extract

1 tablespoon lime juice (freshly squeezed)

Pinch of sea salt

Optional: Lime zest for garnish

Prepare the Pineapple: If you haven’t done so already, peel, core, and dice the fresh pineapple into small chunks.

    Blend Ingredients: In a blender or food processor, combine the diced pineapple, coconut milk, honey (or maple syrup), shredded coconut, vanilla extract, lime juice, and a pinch of sea salt. Blend until completely smooth and creamy.

      Taste and Adjust: Taste the mixture and adjust sweetness if needed by adding more honey or maple syrup.

        Pour into Molds: Pour the blended mixture into silicone molds or a shallow baking dish lined with parchment paper, smoothing the top with a spatula.

          Freeze: Place the molds or dish in the freezer and let them freeze for at least 4-6 hours, or until fully solid.

            Release and Serve: If using a baking dish, remove the frozen block by lifting the parchment paper out. Cut into bars or squares. If using molds, gently pull the sides to release the bars.
