Ingredients

2 cups frozen strawberries

1 cup coconut milk (full-fat for creaminess)

2 tablespoons chia seeds

3 tablespoons maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

Pinch of salt

Fresh strawberries and mint leaves for garnish (optional)

Small paper cups or silicone molds for serving

Instructions

Blend the Strawberries: In a high-speed blender, combine the frozen strawberries, coconut milk, maple syrup, vanilla extract, and a pinch of salt. Blend until you achieve a smooth, creamy consistency. You may need to stop and scrape down the sides of the blender a couple of times to ensure everything is well mixed.

Incorporate Chia Seeds: Once the mixture is smooth, add the chia seeds and give it another quick blend for about 10 seconds. This will help to evenly distribute the chia seeds throughout the mixture.

Chill the Mixture: Pour the strawberry-chia mixture into a bowl or pitcher and let it sit at room temperature for about 10 minutes. This allows the chia seeds to swell slightly, making the ice cream texture even better.

Fill Cups: Using a ladle or measuring cup, carefully pour the mixture into your small paper cups or silicone molds, filling each about three-quarters full.

Freeze: Place the filled cups or molds in the freezer and let them freeze for at least 4 hours, or until fully set. For best results, leave them overnight.

Serve: When ready to serve, remove the cups from the freezer and let sit at room temperature for about 5 minutes to soften slightly. To remove from silicone molds, gently pull the edges away and invert the molds.

Garnish: Top the ice cream cups with fresh strawberry slices and mint leaves if desired, and enjoy your refreshing summer treat!
