1 cup pitted Medjool dates

1 cup raw almonds

1 cup Greek yogurt (plain or vanilla)

1/2 cup unsweetened shredded coconut

1/4 cup almond butter

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup mini chocolate chips (optional)

Pinch of cinnamon (optional)

Instructions
 

Prep the Dates: If your Medjool dates are not soft, soak them in warm water for about 10 minutes. Drain and pat dry.

    Blend Ingredients: In a food processor, combine the pitted dates, almonds, Greek yogurt, almond butter, vanilla extract, sea salt, and cinnamon (if using). Pulse until the mixture is well-blended and forms a sticky dough.

      Add Chocolate Chips: If you’re using mini chocolate chips, fold them into the mixture by hand.

        Form Balls: Use your hands to scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat this process until you’ve used all the mixture.
