Ingredients

3 ripe bananas, mashed

2 cups Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1 tsp vanilla extract

1 cup granola (preferably with nuts or seeds)

1/4 cup mini chocolate chips (optional)

1/4 cup shredded coconut (optional)

A pinch of cinnamon (optional)

Instructions

In a mixing bowl, mash the ripe bananas until smooth. This will serve as the natural sweetener and base for your bars.

Add the Greek yogurt, honey (or maple syrup), and vanilla extract to the mashed bananas. Mix until well combined and creamy.

Stir in a pinch of cinnamon if desired for added flavor.

Gently fold in the granola, mini chocolate chips, and shredded coconut (if using) until evenly distributed throughout the mixture.

Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

Pour the yogurt-banana mixture into the lined baking dish and spread it out evenly with a spatula.

Place the dish in the freezer for about 4 hours or until completely firm.

Once frozen, remove the dish from the freezer and lift the bars out using the parchment paper overhang.

Cut into squares or bars, and serve immediately or store them in an airtight container in the freezer for up to a month.
