2 cups plain Greek yogurt

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup fresh or frozen cherries, pitted and halved

1/2 cup dark chocolate chips (70% cocoa or higher)

1 tablespoon coconut oil (to help the chocolate melt smoothly)

A pinch of sea salt

Optional: Chopped nuts or sprinkles for topping

Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Stir well until smooth and creamy. Adjust sweetness to taste if necessary.

    Add the Cherries: Fold in the pitted and halved cherries into the yogurt mixture gently to avoid breaking them too much.

      Fill the Molds: Spoon the yogurt-cherry mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.

        Insert Sticks: If your molds come with lids, insert the popsicle sticks through the lids. If using classic molds, insert sticks directly into the yogurt mixture until they stand upright.

          Freeze the Pops: Place the filled molds in the freezer and freeze for at least 4 to 6 hours or until completely solid.

            Melt the Chocolate: In a small microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring after each, until the mixture is smooth and glossy. Be careful not to overheat.

              Dip the Pops: Once the yogurt pops are fully frozen, remove them from the molds. Quickly dip each pop into the melted chocolate, allowing any excess to drip off.
