1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup chocolate-covered coffee beans, roughly chopped

1 cup vanilla frozen yogurt

1 tablespoon espresso powder (optional)

Optional chocolate drizzle: 1/4 cup melted dark chocolate

Prepare the Dough:

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy. This should take about 2-3 minutes.

      Mix in the Wet Ingredients:

        Add the egg and vanilla extract to the mixture. If using, dissolve the espresso powder in a tablespoon of hot water and add it at this stage. Mix until well combined.

          Combine Dry Ingredients:

            In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined.

              Fold in the Coffee Beans:

                Gently fold in the chopped chocolate-covered coffee beans until evenly distributed throughout the dough.

                  Shape and Chill:

                    On a piece of plastic wrap, shape the dough into a log approximately 2-inch diameter. Wrap tightly and refrigerate for at least 1 hour until firm.

                      Prepare the Frozen Yogurt Layer:

                        While the dough is chilling, remove the frozen yogurt from the freezer to soften for about 10 minutes. Once softened, spread it out into an even layer on a parchment-lined dish or tray (ensure it's large enough for the cookie log). Return to the freezer to harden slightly.

                          Slice and Assemble:

                            Remove the chilled cookie dough from the refrigerator. Using a sharp knife, slice the dough into 1/2-inch thick pieces. Preheat your oven to 350°F (175°C) and place the cookie slices on a parchment-lined baking sheet, spacing them well apart. Bake for 10-12 minutes until lightly golden.

                              Cool the Cookies:

                                Once baked, allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.

                                  Create Cookie Layers:

                                    Once the cookies are completely cooled and the frozen yogurt has set, layer a piece of cookie, a slice of frozen yogurt, and another cookie on top, creating a sandwich. If desired, drizzle the melted dark chocolate over each cookie stack.

                                      Final Freeze:

                                        Place the assembled cookie slices back in the freezer for about 30 minutes to firm up before serving.
